RUAAHHH rain

I finally used the new oven at my parent's house, I love it, there's new settings to play with! I baked a lemon cheesecake (no sugar, no dairy and no fun to bake). And tiramisu brownies! It was the perfect weather to bake in, I felt very witchy. The weather kept fluctuating from soft spits to heavy down pour, it was very bipolar. 

I walked to my friend's house because it was only doing those tiny "don't worry about it" spits. It was a 10-mintue walk. 10 minutes. Yet somehow, I arrived looking like I has swum the entire way fully clothed. Add "fluctuating weather" to my hate list. 

Aside from baking, I watched movies hehe. I watched the following:

Accepted (2006) - I found this very entertaining and interesting; it questions the educational system. 

The Bucket List (2007) - Netflix said it was a comedy; it was not.. I felt more emotional than anything. 

Mamma Mia (2008) - Needed a pick me up after The Bucket List. This is film is timeless, I love it, we must do Mamma Mia hang out hehehe. 

Singles Inferno - Not for me. 



Tiramisu Brownies: 

Please note that I pretty much eyeballed everything especially with the 'tiramisu' part. 

Brownies: 

Ingredients:

200g butter 

1/4 cup cocoa powder 

2 cups brown sugar 

1 cup flour 

1 egg 

1 tsp vanilla (or 'til your ancestors tell you to stop) 

Method: 

Preheat the oven to 180c and prepare your brownie tray. (note: the walls of the tray must hold twice the size of the brownie).
In a decent sized pot, melt the butter (DO NOT BOIL). It helps if you cut it into cubes and mix it around while it melts~

Remove the pot from the heat add the eggs and vanilla and mix until fully incorporated. Once fully mixed add the rest of the ingredients in and transfer the batter to the prepared tray. 

Bake the brownie for 20-25 minutes. 

Once baked, allow the brownie to rest and cool for at least 30 minutes (longer is preferable).

Tiramisu: 

Ingredients:  

Cream Cheese (i used lac toes free)

Fresh cream (plant based)

1 cup of black coffee 

1 Tbsp cocoa powder 

Method:

1 hour before the baking begins, allow the cream cheese to sit in room temp. 

Once the brownie is cooled;

 Cream the cream cheese, once smoothed add the entire carton of fresh cream. Spread the mixture onto the brownies, smooth it out with a flat spatula. Once completely flat, dust the cocoa powder, then allow to rest for 2 hours.

  1. TIRAMISU BROWNIES!!!! Stay out of the rain and drink water after you get drenched and don't get sick it sucks. So glad to get a witchy entry again (●´∀`●)

  2. lemon cheesecake 🤮 idk maybe in the past I had bad lemon cheesecake and you're actually so goated it won't matter. fluctuating weather is just NZ really. I need to watch mama mia, and try tiramisu brownies (cannabalism)
